Strawberry Protein Pancake Poppers!

I don’t do a lot of breakfast recipes. For me, breakfast is usually pretty simple… some eggs or egg whites, maybe a potato, definitely some veggies, and once in a while it is fruit or yogurt. I have to tell you though, I am a sucker for some pancakes.

These specific pancakes are easy to make, handheld, fun for the kids, or perfect to grab and go. You can adjust the amount of them that you eat by planning out your day in advance. Because they are super low in fat, they are a perfect breakfast for the days when you have fat-heavy meals for lunch or dinner.

This recipe makes 12 servings, or 12 poppers. Each popper is 4g carbs, less than 1g fat, and 2.5g protein. You can pair these with sugar-free syrup for 0-0-0, or you can even add in a tsp of sugar-free strawberry preserves to your warm syrup for even more flavor and very minimal macros.

Here is the recipe for Strawberry Protein Pancake Poppers:

  • 3/4 cup Kodiak Power Cakes Buttermilk Flapjack & Waffle Mix
  • 1.5 tbsp Egg Whites
  • 1/3 cup Water
  • 1/2 cup Strawberries (finely chopped)

Preheat your oven to 350 degrees. In a large mixing bowl, combine the pancake mix, egg whites, and water. Whisk together. Once combined, fold in strawberries.

Lightly spray a mini-muffin tin with non-stick spray. Evenly distribute the pancake mixture between all 12 mini-muffin cups (no liner needed). Bake on the center rack for 7-10 minutes, or until the outside of each popper is firm and the inside is fluffy.

Optional: Heat Walden Farm’s Pancake Syrup on the stove over low-medium heat. Add 1 tbsp (15g) Reduced Sugar Strawberry Jelly/Preserves. Whisk to combine and drizzle over top of finished poppers (or use as a dipper).

Once cooked, allow the poppers to cool in the tin for 1 minute, then eat (or allow to cool on a rack before storing in an airtight container in the refrigerator).

In my opinion, a perfect serving of these (to fill you up while still being macro friendly) is 4 to 5 poppers (5 poppers is 21g carbs, 1g fat, 13g protein). They are delicious and somewhat decadent, so they definitely hit the spot without needing to overdo it. You can also pair these with a serving of egg whites, or a side of your favorite breakfast meat for added protein with little fat.
